Chef Felipe began his journey with The Bastion Collection in 2019 with the opening of Le Jardinier in New York City, where he served as a sous chef, honing his craft and absorbing the teachings from Michelin-starred Chef Alain Verzeroli. Following its opening, Chef Felipe took his talents to Le Jardinier Miami, before traveling to Houston in 2021 to join the opening team for Le Jardinier at the iconic Museum of Fine Arts, Houston as Chef de Cuisine. In 2023, Chef Felipe was promoted to Executive Chef and at Texas’ Inaugural Michelin Guide ceremony in 2024, Le Jardinier MFAH was awarded one Michelin Star.
Born in Bogotá, Columbia, Chef Felipe has always loved cooking for his family using unique, local ingredients. Botero graduated from the Culinary Academy of Long Island, but credits much of his learnings to chef Alain Verzeroli and his experiences within The Bastion Collection. Prior to joining The Bastion Collection, Botero held positions at numerous New York City establishments, including Union Square Café which earned a four-star rating from The New York Times during his tenure. His resume also includes Sam Hazen’s Michelin-starred Veritas and The Chester. Chef Felipe brings his creativity, exceptional technique and fine palate to his role at Le Jardinier MFAH.
