
Launched in 2021 by Katrina Ferraro and Freddy Diaz, Las Brasas, is a custom-designed live fire trailer that has quickly become a standout in Austin and the Texas Hill Country. Together, Katrina and Freddy have built Las Brasas into an event experience that embodies their dedication to quality, innovation, and community. Combining their unique talents and shared passion for excellence, Katrina and Freddy strive to celebrate the tradition of open-fire cooking. Freddy’s diverse background and experience have positioned him as one of Texas’ up-and-coming chefs and restaurateurs. His heritage from El Paso and the flavors of Central and South Texas heavily influence his cooking style, which is at the heart of Las Brasas. Katrina Ferraro is a distinguished hospitality consultant and operator, known for her innovative approach and meticulous attention to detail. As operating partner of Las Brasas, Katrina brings her passion for hospitality and for creating an unforgettable experience. In addition to Las Brasas, Katrina also owns and operates The Long Goodbye, a cocktail lounge and patio in East Austin. The pair met while working together at Contigo Catering, where Freddy was the Executive Chef. Over the years, they envisioned an idea that fused their culinary styles and Freddy’s deep knowledge and love for the craft of open fire cooking. Determined to bring their idea to life, Katrina and Freddy enlisted Millscale, renowned for their craftsmanship in creating custom smokers and santa marias. Together, they designed and built the unique trailer that would become the heart of Las Brasas, enabling them to deliver their signature flavors and techniques to events across Texas.
